Super Healthy Spaghetti Bolognese

If you are looking for an authentic Italian recipe for Spaghetti Bolognese, this hub is not for you! But if you are looking for a tasty and healthy dinner to serve your family then read on.....
Like many things I cook, this isn't a very exact recipe. It's a bit vague I guess, but it works! Firstly, you will need a pack of lean beef mince (I use extra lean steak mince). You will also need a variety of vegetables to add to your sauce. Try any or all of the following:
- onions
- carrots
- courgette (zucchini)
- mushrooms
- red or green pepper
You need to chop the vegetables very finely so that they merge into the sauce. You can do this by hand, or you can be lazy like me and pop them all in a food processor.
Spray a frying pan with a little spray oil or use a small amount of sunflower oil. Brown the mince then use a slotted spoon to take it out of the pan and set aside. Then add a little more oil and fry the chopped vegetables to soften them. When they are soft, return the mince to the pan and add either a tin or chopped tomatoes or a jar of tomato based pasta sauce. If using tinned tomatoes, you might want to add a small amount of stock or a glass of red wine to the sauce.
I also usually add some herbs at this point. Dried basil or oregano are best, but use whatever you prefer.
Simmer the sauce for around 15-20 minutes. Then serve with spaghetti or whatever pasta you prefer. If you have smaller children, you may find that a smaller pasta shape like penne is easier to handle.
