Receipe for easy one pot chicken and chickpea

Looking for a quick, easy and healthy meal for dinner tonight? Why not give this one a try. It is packed with lots of essential nutrients - lean chicken for protein, chickpeas which are also a source of protein, as well as complex carboydrates, and of course super healthy broccoli.

Ingredients:

  • 1 tbsp sunflower/vegetable oil
  • 4 skinless boneless chicken thighs or breasts
  • 1 large onion, thinly sliced
  • 2 crushed cloves of garlic
  • 400g chickpeas, drained
  • 200g easy cook rice (white or brown)
  • 1 head broccoli broken into florets
  • 500ml chicken stock

Heat the oil in a large flameproof casserole and fry the chickens for two minutes each side, to brown them. Lift them out and keep warm. Then fry the onion and garlic for 3-4 minutes to soften. Add the chickpeas and rice to the pan and stir together.

Return the chicken to the pan on top of the rice and add the stock. Cover and cook on a low heat for 20 minutes. Then sit the broccoli on top and continue to cook until the rice and broccoli are tender and the chicken is cooked through. Serve immediately.
